In 1918 stichtte Kosaku Homare de 'Homare Brewery' met als doel de beste sake te brouwen in de Aizu-regio. De brouwerij vestigde zich in het stadje Kitakata, aan de voet van het Iide-gebergte, dat door de lokale bevolking als heilig wordt beschouwd en bekend staat om het eeuwenoude, zachte en zuivere water genaamd Kitakata Meisui. Naast het perfecte water staat de regio ook bekend om de rijstteelt, wat voor Homare-san de ideale combinatie vormde. Dankzij het gebruik van deze lokale hulpbronnen groeide Homare Brewery al snel uit tot de grootste brouwerij in de Fukushima-prefectuur. Als eerbetoon aan het gebied richtte Homare-san het merk Aizu Homare op, met de belofte zich te verbinden aan de regio, gebruik te maken van nieuwe ontwikkelingen en trouw te blijven aan lokaal vakmanschap. |

Gedurende meer dan honderd jaar heeft de brouwerij talloze prijzen zowel nationaal als internationaal ontvangen. Dit succes is mede te danken aan de constante toewijding van de brouwerij aan de visie van Homare-san: het gebruik van lokale producten en hulpbronnen, het omarmen van moderne technieken onder toezicht van lokale vakmensen. |

Aizu Homare anno nu
Aizu Homare is de beste brouwerij van Fukushima waar ongeveer 70 personen werken, met een volume van ca. 1.8 miljoen liter per jaar zijn ze uitgegroeid tot de grootste brouwerij van de regio. Ook hun shochu doet het erg goed in 2022 hebben ze 400.000 liter shochu gestookt voornamelijk uit sake rijst. Het een compleet aanbod van sake, umeshu, fruit sake en shochu is Aizu Homare uitgegroeid tot een internationaal merk wat in de meerste landen goed verkrijgbaar is. Ondanks dat ze zeker niet de grootste brouwerij zijn maken ze een compleet aanbod. Van de normale sake tot top junmai daiginjo's en heerlijke frtuit sake. No aroma chemicals, colourants, acidity regulators or preservatives have been used.

Kitakata Terroir Episode II Junmai is a Junmai Muroka Genshu sake, or pure rice sake without carbon filtration to which no water has been added before bottling. The sake is made from Yumenokaori sake rice from Kitakata and yeast that was locally developed in Fukushima. In the nose hints of Muscat grapes, melon and Lychee. On the slightly dry pallet, the beautiful, powerful, full, robust taste with lots of Umami stands out. The finish is refined and very enjoyable. A powerful sake that combines wonderfully with grilled dishes, especially when offered hot. The sake can be served cold in a white wine glass or hot in an O-Choko.
Karahashi Yamada-nishiki of Aizu Homare is a Muroka Genshu sake made with hundred percent Yamada-nishiki rice, exclusively obtained from the Hyogo prefecture. Carefully brewed with ultra soft water, "Kitakara Meisui," from a depth of 100 meters below ground. After the press process, the sake is immediately bottled and space is given to mature the flavors. This is followed by fast cooling up to -5 Celsius in a cooled room. Every step in making this sake is carried out under strict supervision, until just before it is ready for shipment. This beautiful made sake reveals a bouquet that is reminiscent of apples and tropical fruit, with an exuberant scent. The unique and extensive flavor profile, specific to Yamada-Nishiki, is characterized by its lush and balanced interplay of acidity and sweetness. Kitakata Terroir Episode I is made from famous Yamada-nishiki grown in Kitakata. The theme and challenge of Episode 1 are how this rice can be grown in the cold North of Japan and how to create a unique flavour element typical of the terroir of Kitakata. On the nose, a sweet aroma of melon, strawberry and raspberries. On the pallet a refreshing sweetness, lots of minerals, a broad mouthfeel and a fine crunchy aftertaste. The sake is delicious with steamed vegetables and poached white fish. It is best to serve this sake cold in a white wine glass.
Kitakata Episode III Junmai Ginjo is made with the sake rice Gohyakuman-goku and the Utsukushimayume yeast which was locally developed in Fukushima. Due to the microclimate in Kitakata, the rice gets a completely different flavour profile than Niigata, where this rice is widely grown. The result is a vibrant sake with many aromas of exotic fruits such as passion fruit, pineapple and mango. On the pallet, a good balance between sweet notes and refreshing acidity and a clean long finish completes this sake. With unspoken dishes, this is a delicious sake to combine, think of scallops grilled in butter.This sake is best served cold in a white wine glass.

Ho-Honkaku Rice Shochu (Kome) is an authentic Shochu from Aizu Homare. A soft shochu with lots of ginjo-ka in the aroma and the taste. Ginjo-ka stands for fruity aroma and it origins from the yeast and brewing method.
Long-aged Koji Sake from Aizu Homare was brewed in 2005 with 100% koji rice. Although the brewing process is the same as normal sake, apart from the use of only Koji rice, the taste is exceptional and balanced sweet with a refreshing sour in the aftertaste. During the ripening process, a unique aroma, the amber color and the full taste, are created, which are real characteristics of ripened sake.This sake can be served at different temperatures showing a unique caracter with each temperature served.
Kitakata Terroir Episode IV Junmai Daiginjo is the crown jewel of the Episode series and created again with Yamada-nishiki from Kitakata. It is striking how much difference there is between the rice grown here and that from the cradle of Yamada-Nishiki Hyogo. The water that is used also plays a major role in this. On the nose, exotic tropical fruits such as persimmon, pomegranate and mango. The pallet is soft, friendly with a lively taste characterized by several layers that emerge each time, the finish is long and refreshing. A varied cheese platter or a Japanese dinner are perfect for this sake. Ultimate enjoyment served cold in Sophienwald special sake glass by the fireplace is certainly an option.
Banshu Yamada-nishiki Junmai Daiginjo won the IWC 'Champion Sake' from 876 entries from all over the world in 2015 and received the title 'Best sake of the world'. Intense aromatic style.
