For many years, Mitsutake has been engaged in the manufacturing of Sake and Shochu. Recently, they have expanded their product line to include offerings such as Umeshu and Gin.
Iyashino Umeshu brings out the natural sweetness of plum wine, the richness of pure rice wine, and the moderate acidity of Ume, which slowly seep into your tired body. Enjoy this luxurious flavor that will provide a moment of relaxation during your busy days. This Ume has a gentle and pleasant mouthfeel and is very easy to drink. We recommend drinking it pure, on the rocks or with even with soda water.
Mitsutake Karakuchi Junmai is a delicious dry sake with a fine bouquet of flowers and roasted grains. On the pallet, the subtle drying taste stands out as the name suggests, namely "Karakuchi" The sake has a lot of umami, nice acidity and has a lot of earthy notes on the pallet. The finish is clean and fine with light acidity that lingers.<
Mitsutake Tezukuri is an artisanal Junmai sake that excels with umami and its intense rice flavor. Sometimes you want to be surprised by a sake and sometimes you want to get exactly what you expect. This sake is exactly what you would expect from a Junmai such as Umami, a fine acidity, slightly fatty and a robust taste. Also in terms of nose, this sake is completely right, lots of grain, earthy notes, some dairy and some fruit such as banana.
This Mitsutake sake is crafted exclusively from Yamada-nishiki rice, yeast, and koji, brewed to unlock the full potential of this premium rice. With an alcohol content of 13%, it offers a delightful fruity aroma reminiscent of strawberries and melons, paired with the refined, clean flavour that Yamada-nishiki is known for. A refreshing acidity derived from malic acid adds balance, making this sake an elegant and versatile choice for pairing with a variety of dishes or enjoying on its own.
Mitsutake Junmai Ginjo is a sake in which the koji is manufactured using a labor-intensive and traditional method called "Box Koji". This results is a delicate taste that can only be achieved through small-scale preparation and traditional artisanal techniques. Lots of fruit notes and light floral notes on the nose such as strawberry, raspberry and white roses. Delicate texture with a lot of depth, a soft and complex sake with a beautiful finish.Best served cold in a white wine glass or the special Sophienwald sake glass.
Yakiimo Imo Shochu is crafted using roasted sweet potatoes (imo) and black koji, a departure from the usual steaming method. After distillation, the Shochu is chilled for two days at -5℃, during which oils and other impurities are meticulously removed by hand. The result is a Shochu with a rich flavour and aroma, free from unwanted notes, and distinguished by its elegant profile that highlights the unique softness and natural sweetness of roasted sweet potatoes.
Blue Botoru Mugi Shochu is a barley distilled spirit with light taste and fruity fragrance made by using barley as a raw material, raising Koji commodity and prolonged low temperature fermentation. You can enjoy a refreshing taste peculiar to vacuum distillation, with hot water splitting or water splitting, also especially at rock.

Salaryman Kintaro is a business manga written by Hiroshi Motomiya that depicts the hero Kintaro Yajima's success and growth as a salaryman. Golden Mugi Shochu is made from grain (mugi) and matured for three years in oak, resulting in a beautiful golden-coloured and soft shochu. The aroma is quite neutral, which makes the taste all the more surprising. It offers a rich, warm and oaky flavour profile, with a balanced mix of spicy notes, similar to grain gin or a bourbon or whiskey that has been matured in oak for several years. Z no Tamashii is a barley shochu made in collaboration with Mazinger Z manga. This shochu uses barley as the raw material and is made by increasing the koji ratio and fermenting it at a low temperature for a long period of time. This barley shochu has a light taste and a fruity aroma. The clean, smooth taste that is unique to vacuum distillation can be enjoyed with hot water, water, or on the rocks.
