In 1918 stichtte Kosaku Homare de 'Homare Brewery' met als doel de beste sake te brouwen in de Aizu-regio. De brouwerij vestigde zich in het stadje Kitakata, aan de voet van het Iide-gebergte, dat door de lokale bevolking als heilig wordt beschouwd en bekend staat om het eeuwenoude, zachte en zuivere water genaamd Kitakata Meisui. Naast het perfecte water staat de regio ook bekend om de rijstteelt, wat voor Homare-san de ideale combinatie vormde. Dankzij het gebruik van deze lokale hulpbronnen groeide Homare Brewery al snel uit tot de grootste brouwerij in de Fukushima-prefectuur. Als eerbetoon aan het gebied richtte Homare-san het merk Aizu Homare op, met de belofte zich te verbinden aan de regio, gebruik te maken van nieuwe ontwikkelingen en trouw te blijven aan lokaal vakmanschap. |

Aizu Homare anno nu
Aizu Homare is de beste brouwerij van Fukushima waar ongeveer 70 personen werken, met een volume van ca. 1.8 miljoen liter per jaar zijn ze uitgegroeid tot de grootste brouwerij van de regio. Ook hun shochu doet het erg goed in 2022 hebben ze 400.000 liter shochu gestookt voornamelijk uit sake rijst. Het een compleet aanbod van sake, umeshu, fruit sake en shochu is Aizu Homare uitgegroeid tot een internationaal merk wat in de meerste landen goed verkrijgbaar is. Ondanks dat ze zeker niet de grootste brouwerij zijn maken ze een compleet aanbod. Van de normale sake tot top junmai daiginjo's en heerlijke frtuit sake. Een totaal aanbod voor zowel de consument als voor de horeca. |
