Sho Shin Sake
The Netherlands’ first sake brewery
Sho Shin Sake is an independent sake brewery based in Oosterbeek, the Netherlands. What started as a shared passion between Dutch friends has grown into a craft brewery with a deep appreciation for Japanese flavour, culture and brewing tradition.
The brewery was founded by Arno and Reinout, later joined by Bart. Together, they immersed themselves in the detailed craft of sake brewing, exploring every part of the process: rice, koji, yeast, temperature, timing and maturation. Their journey also took them to a family-owned sake brewery in the mountains of Yamagata Prefecture in northern Japan, where they gained hands-on experience in traditional sake production.
Sho Shin Sake is located in a 19th-century building in Oosterbeek, a historic artists’ village surrounded by forests, rivers and natural springs. The local water contains the right balance of minerals, making it well suited for brewing refined sake. For other essential ingredients, including polished sake rice, koji-kin and special sake yeasts, Sho Shin Sake works with skilled Japanese producers.
Sustainability is also an important part of the brewery’s approach. By importing dry ingredients and adding water locally, unnecessary transport is reduced. The brewery is energy neutral, uses only natural ingredients and follows a zero-waste mindset.
Sho Shin Sake offers a Dutch interpretation of an ancient Japanese tradition: brewed locally, with respect for the original craft and a clear character of its own.
