The second pressing from Sho Shin Sake is a truly distinctive sake. Brewed using the centuries-old mizumoto method with natural lactic fermentation, it develops a surprisingly dry and fresh character with higher acidity and pronounced notes of lychee, strawberry, yoghurt and rice.
Entirely handcrafted using pure water from the Veluwe. After pressing, the unpasteurised sake is matured in tank at a very low temperature. Immediately after bottling, it is pasteurised once (namachozo) to preserve its freshness and lively character.
A great match with richer dishes, grilled shellfish or a cheese board. Serve chilled, or allow it to gradually reach room temperature while drinking.
